Muffins :Orange and Coffee flavour


When I am in no mood for frosting and want a good looking dessert, muffins are by life saver. Muffins are easy bake which can also be a savory other than a dessert.

Before I have started baking, to me like many, muffins were more like cup cakes without frosting, but honestly now I get bothered when people cannot make the difference. In spite of the ingredients being similar the mixing process and batter are different.Cupcake batter is beaten significantly longer than muffin batter which is beaten briefly and remains relatively lumpy.

I made 24 muffins of half Orange and half Coffee flavour. The ingredients for both were similiar other than the flavour enhancer ( coffee and orange zest)



( make two set of each)

  • 175 grams of  refined flour
  • 175 grams of castor sugar
  • 75 grams of  white butter or margarine
  • 2 eggs
  • 1 tsp of vanilla essence
  • 30 grams of coffee ( for the coffee flavour one)
  • 30 grams of orange zest  ( for the orange flavour one)
  • 1/4 tsp of baking powder


  • Sift together flour,coffee or orange zest,baking powder in a bowl
  • Cream butter and sugar
  • Add egg n vanilla and beat well
  • Mix the dry ingredients with the wet
  • Line in 24 cupcakes
  • Bake in a pre heated ( 180 degree c) for 30 mins
  • Transfer in a wire rack
  • Leave it to cool
